Having worked across some of London’s top hotels, Executive Chef Michael Riordan has used his expertise and culinary flair to create a new Vintage Menu to mark 100 years of Hilton. The menu combines fresh, regional ingredients to deliver the tastes and textures of truly British traditional offerings alongside a selection of modern dishes. Guests will be transported back in time with starters including soused herring, served with pickled radish, cucumber dill and sour cream, or a traditional brawn, potted pigs head with piccalilli and sourdough. Vintage mains include a Hereford beef cobbler with mature cheddar and thyme scones, steamed steak, ale and mushroom suet pudding or a wild rabbit stew. To finish off the vintage experience why not try a classic spotted dick or opt for a raspberry and almond trifle.
